Roasted Wild King Salmon with Sweet Chipotle Salsa
Makes 4 servings – Serving size: 1 piece
Sweet Chipotle Salsa
Ingredients:
½ cup roasted red peppers
¼ cup soft, pitted prunes
3 tablespoons Riesling wine
2 teaspoons canned chipotle peppers in adobe sauce. Start with half and add according to heat tolerance.
1 tablespoon balsamic vinegar
1 tablespoon roasted garlic
1 teaspoon cocoa powder (optional) for a mole note
1 teaspoon salt
Directions:
Blend until smooth in food processor. Remove and reserve for salmon.
Wild King Salmon
Ingredients:
1 tablespoon extra virgin olive oil
½ teaspoon fresh garlic, fine chop
1 lemon, zest
½ teaspoon salt
¼ teaspoon coarse ground black pepper
4 each/4-ounce wild king salmon filets, skinless, boneless
Directions:
Preheat oven to 375 F. In a mixing bowl, combine olive oil, garlic, salt and pepper, mix and add salmon filets, toss until coated. Fit a wire rack into a rimmed baking sheet. Place salmon on top and bake for about 12-15 minutes or until lightly opaque inside. Serve with sweet chipotle salsa on top.
Always try to get wild salmon if possible. And if grilling, be sure to
avoid any charring or excessive smoke. Spring is upon us and fresh wild salmon season is right around the corner. It’s a delicious dinner table food that’s also a healthy prescription for beautiful looks!
