Egg salad sandwiches are delicious, budget-friendly, comfort food fare. But a sandwich filling mixed with mayo is far from an ideal meal. We’ve revamped the traditional egg salad with a superfood addition – creamy avocado! Swapped in for mayo, you get twice the flavor and all of the plant-based benefits. Avocados’ natural, healthy fats will fill you up, help nix cravings, and keep you feeling fuller faster. And the flavor? Absolutely delicious with boiled eggs. You won’t believe how delicious this simple sandwich is!



One of our favorite things about this sandwich is its ease of preparation. Simply dice your boiled eggs into small pieces, and toss with your avocado, lemon, salt, and pepper. That’s it! Since avocado is so creamy and filling, and lemon has such a great natural zest, there’s no need for additional ingredients. This creamy mix is an excellent substitute for mayo. Many of you may end up preferring its taste! Simply spread your egg salad between two slices of whole grain bread. When choosing bread, the more nuts, seeds, and types of whole grains, the better. We tend to gravitate toward loaves labeled “7 grain” or “9 grain”. This breads have more unprocessed, unrefined, and fiber-rich ingredients that others, making them a wholesome, healthy, complex carbohydrate.


And the nutritional value of your sandwich filling is hard to beat. Eggs offer omega-3 fatty acids and tons of protein, while avocado lends fiber, potassium, and its own healthy fats. This sandwich will fill you up without adding extra fat and calories to your day.

Ingredients


  • 1/2 ripe avocado, pitted and peeled

  • 1 boiled egg, peeled and chopped

  • 1/2 lemon, freshly squeezed

  • salt and pepper

  • 2 slices multigrain bread (toasted, if desired)

Directions



With a fork, smash the avocado, chopped boiled egg, lemon juice, and salt and pepper together just until combined. Overmixing will create an odd color, so you just want to mix until all ingredients are folded together.


Serve between two slices of multigrain bread. Enjoy!
